It is one of the main ingredients of Yucatecan cuisine, especially for preparing "Cochinita Pibil". This paste is also known as "recado rojo" and some people call it Axiote. In Yucatan it is very easy to get it since it is sold in any stand, where they are arranged in columns and look like small partitions.

La Anita brand achiote is a key ingredient in Mexican cuisine, especially in the Yucatan Peninsula, thanks to its ability to add color, flavor and a touch of spice to a wide variety of dishes. Here I share with you some recipes and dishes that you can prepare or accompany with this delicious condiment:

1. Cochinita Pibil

This is probably the most famous dish that uses achiote. Pork is marinated with achiote, sour orange juice, spices and cooked wrapped in banana leaves, traditionally baked or buried in the ground. It is served shredded in tacos, tortas or accompanied by pickled red onion.

2. Chicken Pibil

Like cochinita, pollo pibil is prepared by marinating chicken pieces with achiote and sour orange juice, then steaming or baking them. It is a delicious and lighter option for those who prefer chicken to pork.

3. Fish Tacos with Achiote

Achiote marinated fish is a delicious option for tacos. Achiote enhances the flavor of the fish, giving it a smoky and spicy touch. Serve it in corn tortillas with onion, cilantro and salsa.

4. Grilled Beef Marinated in Achiote

La Anita achiote is perfect for marinating beef or pork before grilling. The result is a meat with a deep and unique flavor, ideal for serving in tacos, tortas, or as a main dish with side dishes such as beans and tortillas.

5. Yucatecan Tamales (Strained Tamales)

These tamales, typical of the Yucatan region, are made with corn dough filled with pork marinated in achiote, wrapped in banana leaves. Achiote gives the tamales a red-orange color and a distinctive flavor.

6. Panuchos or Salbutes

Achiote is essential in the preparation of panuchos and salbutes , which are fried or grilled tortillas stuffed with beans and topped with meat (usually chicken or pork) marinated in achiote, lettuce, red onion, and salsa.

7. Poc Chuc

Poc chuc is a typical Yucatecan dish made of pork marinated in sour orange juice and achiote. It is then grilled and served with red onion, black beans and tortillas.

8. Fajitas or Wires with Achiote

Marinate your chicken, beef or pork fajitas in a mixture of achiote, orange juice and spices. Then, cook them with peppers and onions. This dish is ideal for preparing tacos or serving as a main dish.

9. Achiote Enchiladas

Instead of using a traditional sauce, enchiladas can be dipped in a mixture of achiote and sour orange, giving them a Yucatecan touch. You can fill them with chicken, cheese or shredded beef.

10. Seafood Chilpachole

La Anita achiote can add flavor to chilpachole , a thick seafood broth typical of the Mexican coast. Achiote intensifies the color and flavor of the broth, making it more flavorful.
