POX (pronunciation "posh"), is an ancestral Mayan drink from Chiapas made from four types of creole corn: red, black, yellow and white, sugar cane and wheat. These ingredients are fermented in wooden barrels and distilled doubly in copper stills. This drink is produced in the community of San Juan Chamula, Chiapas. In this region, it is common to chew a coffee bean before taking a sip of POX.
